The Method gives one wine a whole portrait page. It opens with the glass's ring and its colour, your name and the date, and one instruction: circle one word on each line, describe first, judge last. Then come Look, Smell, Taste and End, each line a short scale to circle, such as pale, medium or deep for colour depth and short, medium or long for how long it lasts. Below them the aroma list holds 24 aromas in four families of six for that wine's colour, each with a box to tick. The conclusion puts My guess beside The answer, with room for grape, country and region, age and why you thought so. Last, judge it asks how good and whether you would buy it, and the page closes with What I missed and What I imagined. It is built for one person learning seriously, or a small study group.
Print one page per wine, and set the colour of each glass first, because the colour changes the words and the aromas on the page. The how-to page comes with it: five steps, the scales in a sentence each, and a filled-in example of a Pinot Noir from Burgundy, worth reading once before the first glass. Pour a small taste, fill the page from the top without skipping ahead, and write your guess before you look at the label or ask the person who poured it. The two lines at the foot are where the learning happens, so fill them honestly after the answer. Over a few weeks the pages become a record of how your palate is changing. Spit when you are tasting several wines, keep water nearby, and give each glass ten minutes or so.
Questions
What should you write in wine tasting notes?
Describe before you judge. Note the colour and how deep it is, how strong the smell is and what it reminds you of, then sweetness, freshness, grip, weight and how long the taste lasts. Only then decide how good it is and whether you would buy it.
How do you take tasting notes if you are new to wine?
Circle words instead of writing sentences. Each line on the page offers three or four choices, so you only pick the closest one, and the aroma list gives you names for what you smell when nothing comes to mind.
