Pinot Noir tasting sheet

Make the sheets View: A4 · Letter
This is the full notes page with Pinot Noir at the top instead of Red wine. The rows to circle are the same as for any red, Look, Smell, Taste and End, and Pinot Noir tends to land in the same places on them: pale or medium colour depth, red fruit rather than black, plenty of mouth-watering freshness, a little mouth-drying at most, and light to medium weight. What changes is the aroma list, 24 boxes in four families of six chosen for the grape: red cherry, strawberry, raspberry and cranberry among the fruit, violet and rose among the flowers, clove and smoke from the oak, and forest floor, mushroom and leather for older bottles. The conclusion, guess beside answer, and the verdict follow as usual. It suits anyone learning Pinot on its own terms, from a Burgundy to a New Zealand bottle, one page per wine.
Pour a small taste, let the wine sit a minute, since Pinot opens in the glass, and work down the page. The aroma list makes it easy to see what you found and what you missed, and over a few bottles you notice how a cool place shows more cranberry and a warm one more ripe cherry. If someone else pours blind, fill in your guess before you hear where it is from. Print one page per wine, and the how-to page if it is your first time: its example happens to be a Burgundy Pinot Noir. For a direct comparison of places, the flight sheet puts two to four on one page. Pinot rewards small tastes and patience, so spit between glasses and keep water close.
Questions
What does Pinot Noir taste like?
Red fruit first, cherry, strawberry and raspberry, often with rose, a little spice and, as it ages, forest floor and mushroom. It is usually pale in colour, fresh, light to medium in body, with soft tannin.
How should Pinot Noir be served for a tasting?
Slightly cool, around 14 to 16 °C, in a wide glass if you have one. Twenty minutes in the fridge takes a room temperature bottle to about right.
